Ricotta is an Italian whey cheese made from sheep, cow, goat, or Italian water buffalo milk whey left over from the production of other cheeses. Like other whey cheeses, it is made by coagulating the proteins that remain after the casein has been used to make cheese, notably albumin and globulin.

- La ricotta est largement utilisée et fabriquée en Italie mais l'appellation est employée commercialement aussi dans d'autres pays accompagnée de fromages fabriqués selon des recettes parfois éloignée de celle d'origine car cette appellation fait partie du domaine public et ne fait l'objet d'aucune protection5, elle peut donc être employée à travers le monde pour différents fromages.
