Es una de las especias más antiguas que conoce la humanidad. El componente del árbol de la canela que se utiliza como especia es la corteza, de la que se retira la capa exterior tras su fermentación. Al secarse, la corteza se riza y adopta una forma cilíndrica parecida a la caña de una pluma. En la especie C. cassia no se quita la corteza exterior. El árbol de la canela crece en el Lejano Oriente, en China y en África oriental. Las ramas de canela secas se utilizan enteras, trituradas y en polvo.

L’une des plus anciennes épices connues. L’élément épicé du cannelier est l’écorce qui, après fermentation, est travaillée pour que la couche liégeuse extérieure puisse être éliminée. L’écorce nettoyée s’enroule sur elle-même lorsqu’elle sèche, prenant l’apparence d’un bâtonnet. Dans l’espèce Cassia, l’écorce externe n’est pas retirée. Les arbres croissent en Extrême-Orient, en Chine et en Afrique de l’est. Les bâtonnets de cannelle sont utilisés entiers, moulus ou sous forme de poudre.

One of the oldest spices known to man. The spicy component of the cinnamon tree is the bark, which after fermentation is worked to remove the corky outer layer. The cleaned bark curls as it dries, assuming the appearance of a quill. In the Cassia species the outer bark is not removed. The trees grow in the Far East, China and East Africa. The dried cinnamon quills are used whole, ground and in powdered form.
