- Leguminous crops are considered as vegetables when eaten fresh (green peas (Pisum sativum)), or as sprouts (mungbean (Vigna radiata) and soybean (Glycine max)), whereas other legumes, which are harvested for their dry seed (pulses), such as lentils (Lens culinaris) are not.
